Production
To make the eau-de-vie, cider is first distilled in our still. With a high concentration of alcohol and strong aromas, the vapours condense to produce an eau-de-vie of about 70%. This eau-de-vie is then reduced to 41% and cold-filtered to preserve its clarity.
Tasting notes
Appearance: Colourless and clear
Aroma: Notes of fig, dried cranberry and baked apple, with a slightly sour finish.
Taste: Delicately floral and fruity, with an aniseed finish
