Production
Cider made according to the traditional Champagne method. A first fermentation of the juice in stainless steel tanks is followed by a second fermentation in the bottle, aged on its lees for a period of 12 to 18 months. The dosage is adjusted to obtain a dry cider after riddling and disgorging.
Tasting notes
Colour: With a nice effervescence and a light yellow colour with straw reflections.
Olfactory: Aromatic and fine, this cider gives off scents of fresh apples and white flowers.
Taste: The effervescence is very abundant and made of fine bubbles. The McIntosh, which is a little discreet, brings a touch of acidity to this cider that gives it freshness. Due to the contact with the yeast, a floral profile as well as a toasted bread crumb flavor dominates. Incredibly drinkable, this product is the Cidrerie's most versatile!
Pairings: Excellent as is to replace a Champagne or other sparkling wines during a festive moment, to make cocktails (kir Breton or mimosa), with Asian dishes. Try it with a raclette or a cheese fondue.
