Production
This cider is made according to the traditional Champagne method.
The juice first undergoes a chaptalized fermentation in stainless steel tanks, followed by a second fermentation in the bottle. It is aged on its lees for 12 to 18 months. The blend is then adjusted to obtain a dry cider after riddling and disgorging.
Tasting Notes
Appearance : With a beautiful effervescence and a deep pink color with orange reflections.
Aroma : Aromatic and fine, this cider gives off scents of red fruits and apples.Taste : The effervescence is abundant and made of fine bubbles. Geneva brings acidity and tannins to this cider that provide freshness and astringency. Geneva's red fruit profile is featured here, with the apple and floral aspect being more subdued. Since there is no sugar in this product, a fresh pink grapefruit finish brightens the taste buds!
Best served with : Excellent as is to replace a Champagne or other sparkling wines during a festive moment, but especially with seafood such as mussels, oysters or even, for the more adventurous, sea urchins.
