Production
This cider is made by fermenting the juice in stainless steel tanks, which is then chaptalized and filtered before bottling.
Made according to the Jodoin family's ancient recipe, adapted to the modern era, it represents Quebec's historical cider tradition.
Tasting Notes
Appearance: No effervescence and of a light yellow colour with straw hues.
Aroma: This light and delicate cider gives off the fruity aroma of fresh apples.
Taste: The apples in this cider are much more discreet, providing an almost wine-like quality. The McIntosh brings a touch of acidity for freshness and the Lobo offers a nice fullness. The finish has notes of white flowers. In short, this is the cider that could be most mistaken for white wine, so it's an excellent product to give a cider-skeptic for a blind tasting!
How to enjoy it: This cider is an excellent substitute for white wine as an aperitif, or with anything you would pair with a white wine — fish, seafood, poultry or even pork.
